Friendship Cake


My neighbor called a few weeks ago and asked if I wanted some "starter" for Friendship bread. I thought, "seriously? I really don't need this starter, been there, done that, blah, blah, blah!" so I open my mouth and say,"Sure, when is it ready to be fed and give away?" So a few days later, her son eagerly rings the door bell and hands over the gallon size ziploc bag with the starter inside and a sheet with the instructions and the recipe. Of course, being the cookbook queen (That's me!), I have three different small paperback "Friendship"cookbooks complete with the how to start the starter from scratch. Anyway, if you are unfamiliar with the Friendship starter or "Amish" starter...you get a ziploc bag with this cake batter consistency inside, basically flour, sugar and milk that you squeeze the air out of and "mush" the bag daily letting any excess air out of the bag, every 5 days you feed the starter with one cup of each: flour, sugar and milk. On the tenth day you feed again and divvy up the starter into new ziploc bags to give to friends and bake a portion of it up! So I made the basic recipe tonight, making my house smell heavenly with cinnamon and sugar. So here is the recipe to make with starter....

Preheat oven to 350 degrees. In a large bowl combine the following:

3 eggs
1 C. oil
1/2 C. milk
1 c. sugar
2 tsp. cinnamon
1/2 tsp. vanilla
1 1/2 tsp baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 C. flour
1 large pkg instant vanilla pudding mix
1 c. starter

Pour into a greased and floured 9"x13" baking dish sprinkled with cinnamon sugar (optional). Sprinkle with additional cinnamon sugar over top of cake. bake for 40 minutes or until toothpick inserted comes out clean. Enjoy!

My son came in the kitchen with a note he wrote, "Can I have some sennnomin roll cake when it comes out from the oven?" Too cute! "of course, Sweetheart!" and the little man ate three pieces sprinkled with powdered sugar! I am a happy baking mom! ( more friendship info to come!)
